Chick Peas
Two commercial types of chickpeas are produced: kabuli and desi. The kabuli or garbanzo type, large-seeded with a thin, delicate and colorless or white seed coat, often is made into snacks (in South Asia), ground into hummus (in the Middle East) or canned whole for the salad bar trade (in North America). The desi type, small-seeded with a thick, hard and colored seed coat, often is exported whole to the Indian subcontinent. The desi type usually is prepared for consumption either by dehulling and splitting or by dehulling and grinding into flour.
Lentils
Lentils are classified into two groups by seed size: Chilean or large-seeded and Persian or small-seeded. Cotyledon color varies: yellow, red or green. The two main market classes identified by color are green and red Lentils. Green Lentils tend to be marketed whole while red Lentils are marketed as whole seed or in split form. Lentils are used almost exclusively for human consumption as a protein source in soups, stews and vegetarian dishes.
Urad
Urad, also referred to as theurd bean, urd, urid, black gram, black lentilorwhite lentil (Vigna mungo) is a bean grown in southern Asia. It is largely used to make dal from the whole or split, dehusked seeds. It, along with the mung bean was placed in Phaseolus but has been transferred to Vigna. It was at one point considered to belong to the same species as mung bean.
Black gram originated in India where it has been in cultivation from ancient times and is one of the most highly prized pulses of India. It has also been introduced to other tropical areas mainly by Indian immigrants.
Red Kidney Beans
The kidney bean otherwise called 'the chilli bean' with its dark red skin is named for its visual resemblance to a kidney. The kidney bean is also known as the red bean, although this usage can cause confusion with other red beans. Red kidney beans (rajma in Hindi and Punjabi) are an integral part of the cuisine in northern region of India. Red kidney beans are universally used in New Orleans and much of southern Louisiana for the classic Monday Creole dish of red beans and rice. The smaller, darker red beans are also used, particularly in Louisiana families with a recent Caribbean heritage. Some say they have a smoother taste. Small kidney beans used in La Rioja, Spain, are called Caparrones.
Green Peas & Split Green Peas
Whole Green peas and green split peas are derived from spring sown field peas (pisum sativum) and are usually referred to as blue peas before they are processed. They are sown when soil temperatures are suitable in March and harvested dry in July/August when they are at a moisture content of approximately15%. Green peas are mainly semi-leafless, stand well in the field and harvest before marrowfats.
There are many varieties suited to this market, ranging from the small seeded/dimpled types to the larger seeded round types.
Yellow Peas & Split Yellow Peas
Whole Yellow peas and yellow split peas are derived from spring sown field peas (pisum sativum). They are sown in March and normally harvested in July/August at around 15% moisture content. Yellow seeded peas are normally long, stiff strawed varieties and, are the first to harvest.
There are many varieties to choose from although we prefer the larger smooth seeded round types, particularly for splitting.
